Tex-Mex Bacon Wrapped Meatloaf

Ingredients

    Tex-Mex Spice Blend
  • 2 tsp chilli powder
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp pink himalayan salt
  • 1/4 tsp cayenne pepper
  • Bacon Wrapped Meatloaf
  • 1 medium onion (diced)
  • 2 medium hot chilli's (sliced)
  • 2 Tbsp butter
  • 1/2 cup double cream
  • 1/2 cup gouda cheese (grated)
  • 500g beef mince
  • 1 large egg
  • 1 Tbsp dried oregano
  • 1 tsp pink himalayan salt
  • 1/2 tsp ground black pepper
  • 8 slices bacon

Instructions

  1. Preheat the oven to 200 degrees Celcius
  2. Fry the onion and chilli's in the butter until golden.
  3. Add the Tex-Mex spice and fry for a bit longer.
  4. Set aside to cool.
  5. Mix all the rest of the ingredients in a bowl.
  6. Add the onion / spice mixture and mix thoroughly.
  7. Form into a loaf and place in a butter greased baking dish.
  8. Layer the bacon over the top.
  9. Bake for 45 minutes. (if the bacon gets too crispy before the meat is done, cover in aluminium foil and reduce the heat slightly)
  10. Save the juices and mix them in a pot with some double cream and tamari. Simmer until it has the right consistency.
  11. Serve with Cauliflower Rice or vegetables of your choice.
